I often keep a stash of these delicious granola bars in the freezer for my husband’s lunches. I wrap them individually which saves time in the morning when it’s time to pack his lunch.
A Craigslist “Steal” Isn’t Always a Deal!
We’ve been looking for a microwave hutch since our recent move. I’ve been fairly selective about what it should look like; however, the perfect one wasn’t appearing on Craigslist as soon as I was wanting it to. Then on Black Friday afternoon we noticed a white hutch on Craigslist that looked like it had potential for the small vacant space beside our fridge. Initially, when I saw the hutch I wasn’t thrilled with all of its decorative features; however, I decided it would probably be workable. I also knew purchasing a microwave hutch would result in more counter top space in our kitchen. Certainly, this was a win-win situation. Right? Eric called the person who had listed it and asked if we could come yet that afternoon to pick it up.

Our New Country Home
We are moved and mostly settled! Moving day went well thanks to our family. Their help was much appreciated and made the job so much easier. Also, my cousin who’s on the hospitality committee brought a delicious lunch for the hungry crew. Thanks, Liz!

Luscious Chocolate Cake with Staple Ingredients
Since my doctor advised me to avoid eggs, I’ve been searching for a decadent dessert that is suitable. I remembered growing up that we occasionally made a wacky Chocolate Cake that didn’t list eggs as one of the ingredients. I went searching and found the recipe. Needless to say it was just as yummy as I had remembered, (even without the peanut butter frosting made for my husband!)

A Birthday Tribute to my Mom
My dear mother is celebrating her 55th birthday today.
She will be at home attending to Yoder’s Store so the rest of the family can help Eric and I move. The guys will be packing our furniture and appliances on a large trailer. We’ll then head for our little home in the country where all the unpacking can begin! My kind mother will then likely come over to help me sort through some of the boxes and make sense out of all the chaos.

Economical Chicken Veggie Burgers
I’ve been making these tasty burgers since my friend, Kate introduced me to them. It’s a great way to stretch your meat and certainly a healthy choice with all those added veggies. Ground turkey or chicken can be used for this recipe. I’ve also used zucchini when I’ve had it on hand. Adapt the veggies to your families’ preferences.
