I have memories of my Grandmamma’s graham cracker candy. The other day I heard my dad mention his mother’s unforgettable Christmas candy. I was able to find her recipe and attempted making it for our Christmas. Though its not not quite the same as hers, it’s still delicious. (My confession: I’ve eaten more than my share.)
Graham Cracker Candy
- 1 Ib. Graham crackers, crushed (4 C.)
- 1 C. peanut Butter
- 2 1/2-3 C. sugar
- 1 C. water
- 1 tsp. vanilla
- 1 tsp. vinegar
- 1/2 C. Karo or maple syrup
Mix cracker crumbs & peanut butter together till crumbly. Bring sugar, water, vinegar and Karo/maple syrup to a boil. Add vanilla. Pour over cracker mixture and stir. Immediately put into a greased pan since it hardens fast! Cut in small squares while still warm.
*I was able to replace the Karo syrup with maple syrup. The recipe initially called for 3 C. sugar. However, with the maple syrup I thought it was plenty sweet. My suggestion would be to cut back on the sugar regardless of what syrup you choose to use.
*There are corn free Graham crackers available for anyone struggling with a corn allergy. 🙂
