Here is one of my favorite summer salads. Simply layer the following ingredients on a dinner plate:
- green or red leaf lettuce, or Romaine lettuce and a handful of spinach
- *chopped cooked chicken
- almonds
- shredded cheddar cheese
- Craisins
- tomato wedges
- Avocado dressing – see below
To make the avocado dressing simply mash an avocado. Squeeze lemon juice over the avocado to keep it from turning brown. Add finely chopped onion and garlic if desired. Add a splash of white wine vinegar. Stir together and top your salad with this gooey goodness.
*I like to roast a whole chicken with fresh herbs for dinner. I then use the leftover chicken for this simple satisfying salad. The salad is hearty enough to make my hard-working hubby happy.
